Cinnamon Spiced Fudge recipe
Ingredients:
- 360g icing sugar
- 125g butter
- 50g cocoa powder
- 4 tbsp. milk
- 2 tsp. ground cinnamon
- 1 tsp. vanilla extract
Method of Preparation:
Grease and line a 20cm square baking tin.
Place the butter into a microwavable bowl and heat until melted. Cook it on a low heat and in 20 second increments until it is completely melted.
Let it cool slightly, then add the milk and vanilla and stir.
Sift together the icing sugar, cocoa powder and cinnamon into a large bowl.
Pour the butter mixture over the dry ingredients and stir well until you have a smooth mixture.
Pour the mixture into the prepared baking tin and leave to one side to cool and set.

By tradition, I make a batch of fudge for the family at Christmas, and this year, I tried this recipe for a change. It's superbly simple, but not quite perfect. It might be better if the quantity of cinnamon were to be doubled. Also, I put the result into the fridge to help it set - I don't know whether this was essential. Despite this, it didn't set as I would expect a fudge to set. It was perhaps unhelpful that I failed to sift the sugar and cocoa - I used an electric mixer to deal with the worst of the lumps. End result: delicious, but a bit soft.
